As we returned from our evening stroll today, hubby said he wanted to have “brown halwa”. That reminded me instantly of Rini. My niece. My favourite, favourite girl in the whole world. “Brown Halwa” or Wholewheat Halwa is the five-year-old’s favourite dish. And that of her uncle (my husband) too! This one’s for you, Rini! 🙂
1 cup wholewheat atta
2 tablespoons of ghee
1/2 cup milk
1/2 cup water
Roasted, mixed nuts (Cashew, Almonds, Pistachio, Walnuts, Raisins)
1 teaspoon cardamom powder
Sugar (to taste)
Heat ghee in a pan and add the wholewheat atta to it. Roast on medium flame till it gives out an aroma (it takes approximately around 15 mins). Boil milk and water together and keep aside. Add the roasted nuts to atta and roast for another 2-3 mins. Add cardamom powder and sugar and mix well. Add the warm milk-water mixture while stirring constantly to avoid forming lumps. Turn off the flame and serve warm, garnished with nuts.
NOTE: For weight watchers, atta can be dry roasted and a teaspoon of ghee added as a final step. For diabetics, replace sugar with sugar free sweeteners.
