Minty Cucumber Raita


Pulao is never complete without Raita. While I make over a dozen types of Raita, Minty Cucumber Raita tops my hit list. Not only does it taste amazingly refreshing, it also perfectly complements the flavor of all types of Pulao or Biryani. Very simple and quick to make, this Raita can be enjoyed all the year through. Here’s the quick-mix recipe:


1 cucumber (grated)
1 cup yoghurt (whisked)
1 small teaspoon Mint powder
1 small teaspoon roasted cumin powder
Half teaspoon Kashmiri laal mirch
Half teaspoon rock salt
A pinch of chaat masala
Salt to taste
A few fresh mint leaves


Squeeze out the excess water from the grated cucumber and add it to the bowl of whisked yoghurt. Add mint powder, salt, rock salt, cumin powder, Kashmiri laal mirch and chaat masala and mix well. Put in the refrigerator and allow it to cool before serving. When cool, serve in bowls and garnish with fresh mint leaves. Enjoy as an accompaniment to any dish of your choice.
