A friend called me and told me in the course of our conversation that all her 3-year-old wants to eat is sweets. She was worried that excess chocolates and candies would harm him. Her concern echoed what hundreds of parents worry about every day. Letting the child indulge in sweets is okay once in a while. But it is also essential to ensure that she gets the right amount of nutrients in that. And why just kids? I have seen adults too grab a Snickers or a Cream Roll to satiate their cravings for sweets. Nut and Muesli Toffee Bar is for all those who want to enjoy something sweet without consuming too much of unhealthy ingredients. Here’s the recipe:
1 bowl muesli
1 bowl mixed fruits and nuts (almonds, walnuts, cashew, raisins, dried blueberries, dried strawberries)
200 grams sugar
2 tablespoons honey
400 grams condensed milk
1 tablespoon butter
50 ml water
Dry roast almonds, walnuts and cashew and chop roughly. Keep aside. Heat butter in a thick bottomed pan and add sugar. Stir till it melts and starts turning a light brown. Lower the heat and slowly add water, stirring continuously to avoid forming sugar crystals. Bring to a boil. Keep stirring till the sugar syrup caramelizes. Just as it turns a rich golden brown, add the condensed milk and stir well. Cook for 5 minutes. Add honey and mix thoroughly. Finally, add muesli, dried fruits and nuts and stir till you get a thick texture. Pour the mixture on to a greased tray and let cool. When it is cool, cut into desired shape and wrap in foil. Grab it whenever you feel hungry, low, down on energy or simply when you want to eat something sweet!
