Cheesy Potato Croquettes


When planning for a New Year party, one can never leave out the starters. And in this biting cold, what better than croquettes/cutlets? Imagine biting into a crisp, spicy potato croquette and suddenly experiencing a delectable cheesy taste in your mouth! That’s a yummy surprise, isn’t it? Make these croquettes as a starter or simply as an evening snack and you can rest assured your guests won’t forget its taste for a long, long time. Here’s the recipe:


2 large potatoes (boiled and peeled)
1 carrot (grated)
Mozarella cheese (cut into cubes)
1 small bowl processed cheese (grated)
1 teaspoon freshly ground black pepper
1 teaspoon cumin powder
1/2 teaspoon garam masala powder
Salt (to taste)
4 tablespoons refined flour (dissolved in a 50 ml water to make a thick batter)
1 bowl white bread crumbs
Oil (to fry)


Grate the potatoes so that there are no lumps. Add grated carrot, salt, pepper, cumin powder, garam masala powder and mix well. Make small balls of the potato-carrot mixture and flatten them on your palm. Put a small teaspoon of grated processed cheese and a Mozarella cube in the centre and shape into a ball again. Flatten softly and mould into a desired shape. Dip the croquettes into the refined flour batter and coat well with bread crumbs. Heat oil in a wok and deep fry the croquettes till they turn golden brown. Serve hot, while the cheese is still gooey and stretchy!
