Rock Toast


The name sounds kinda cool, doesn’t it? Well, my Mom came up with that name when I was a fussy child and made me eat something I otherwise I wouldn’t even have touched! Rock Toast, you may say, is the vegetarian version of French Toast. And it’s healthier than you can imagine! So if you’re dead tired after partying all night on New Year’s Eve and want something healthy and filling for brunch, Rock Toast is the thing for you. Made of brown bread, semolina and loads of veggies, this bread dish will soon become your favorite breakfast! Here’s the recipe:


4 slices brown bread
1 bowl fine semolina (sooji)
2 tablespoons yoghurt
1 bowl finely chopped mixed vegetables (carrots, french beans, bell peppers, tomato, onion)
1 tablespoon coriander leaves (finely chopped)
1 green chilly (finely chopped)
1 teaspoon vinegar
Salt (to taste)
4 tablespoons oil
50 ml water


Take semolina in a large bowl and add yoghurt and water to it to make a thick batter. Add vinegar and whisk well to remove any lumps. Fold in the vegetables, coriander leaves and green chilly and keep aside for 10 minutes. Semolina will absorb water and soften in this time. After the semolina is soft, add salt.

Heat a non-stick pan and brush some oil on it. Spread the batter on one side of the bread slices, and put them on the griddle, batter side down. Then spread the batter on the other side as well. Shallow fry till the semolina is well cooked and golden on both sides. Cut into triangles and serve hot with a sauce of your choice.
