Healthy Daliya Pancakes

The poll started by me yesterday has got maximum votes for Health Food. Thanks to the fast-paced life that we all are leading today, we often end up depriving ourselves of the requisite nutrition and eat food that is high on carbs and fat. While we realize that a balanced diet is essential for us, often we fail to find time to cook something that is healthy. Also, we often equate healthy with bland and tasteless. Which, of course, is not true if Health Food is cooked in the right way and with the right ingredients.

Daliya Pancakes stuffed with Sauteed Cottage Cheese and Sprouts are the perfect breakfast option for those who wish to begin their day on a healthy note. These pancakes are easy to cook, good to eat and great for one’s well being. Try it out for yourself. Here’s the recipe:

1 bowl daliya (or oats)
2 tablespoons yoghurt
1 teaspoon vinegar
1/2 teaspoon freshly ground black pepper
Salt (to taste)
2 tablespoons oil (for brushing)

1/2 bowl sprouts (mung, bengal gram)
1/2 bowl cottage cheese (cut into small cubes)
1 pinch turmeric powder
1/4 teaspoon red chilly powder
1/2 teaspoon roasted cumin powder
Salt (to taste)
1 teaspoon olive oil

Soak the daliya (or oats) in one cup water for 20 mins. Transfer to a blender and blend till a thick batter is obtained. Whisk in the yoghurt, vinegar, salt and pepper. Keep aside for 5 mins.

Meanwhile, heat 1 teaspoon olive oil in a wok and add the sprouts. Sprinkle some water intermittently and saute till the sprouts are tender. Add turmeric powder, roasted cumin powder, red chilly powder and salt and mix well. Fold in the cottage cheese cubes and stir. Cover the wok with a lid and cook for 2 minutes.

Heat a non-stick griddle and brush it with some oil. Pour a ladle full of the batter on to the griddle and spread out into a pancake. Cook till the edges turn brown. Flip over and cook on medium flame till the pancakes are crisp and golden on both sides. Repeat the procedure to make the remaining pancakes.

Put a spoonful of the cottage cheese-sprouts stuffing on the pancakes and roll them. Serve hot with Sour Cream, Cheesy Dip, Mint Dip or with Sambhar and Coconut Chutney.

Eat, drink and be merry! 🙂
