Subz Tehri

Subz Tehri is another quick-fix meal that I make on days when it is terribly cold and my fingers refuse to work with their regular dexterity! Cooked in microwave for 15-17 minutes, this Tehri combines the goodness of rice, daal and vegetables and saves me from working in the cold kitchen for prolonged periods of time. Eaten with Raita, Kadhi or any other gravy dish, Tehri is a wholesome meal in itself and an excellent food for winters. Here’s the recipe:

Ingredients:

1 cup rice (washed and soaked for 10 mins)
1/2 cup split moong daal (washed and soaked for 10 mins)
1 bowl finely chopped mixed vegetables (carrots, beans, peas, cauliflower, broccoli, etc)
1 teaspoon olive oil
1/2 teaspoon cumin seeds
2 green cardamoms
1 black cardamom
1 cinnamon stick
1/2 teaspoon ginger-garlic paste
1/2 teaspoon cumin powder
1/4 teaspoon garam masala powder
1/4 teaspoon freshly ground black pepper
Salt (to taste)
2 cups water

Recipe:

Heat olive oil in a pan. Add cumin seeds, green and black cardamoms, cinnamon stick and fry for a minute. Add ginger-garlic paste and fry till it starts turning brown. Mix in the chopped vegetables and stir on high flame for another minute. Transfer the soaked rice and moong daal to a microwave safe bowl and add water. Mix in the stir-fried vegetables, salt, black pepper, cumin powder and garam masala powder and stir well. Microwave on high for 15 minutes or till the rice is cooked. Remove from the oven and mix well, as you will find that the vegetables have come on top. Mix in a teaspoon of Ghee (optional) and serve hot.
