Apple and Walnut Salad


Okay, this is an accomplishment. I have completed one whole week successfully on a Salad-for-lunch regime. And the good thing is, I have not got bored of eating the same thing again and again. That is because I have kept experimenting and innovating with ingredients and have come up with a different Salad for each day of the week. Apple and Walnut Salad is one of the salads I have loved the most. It is healthy, it has lots of crunch and it fills you in no time at all. I made it in a hot French dressing and that gave the sweet Apple a distinct taste. Here’s how you can make it:


2 fresh apples (chopped)
1 small iceberg lettuce (chopped)
1/2 cup walnut kernels (roughly chopped)
1 tbsp cream cheese
1/2 tsp mixed herbs

2 tbsp olive oil
1 tbsp lemon juice
1/4 tsp garlic powder
1/4 tsp freshly ground black pepper
A pinch cayenne
1 tsp green chilly sauce
1/4 tsp chilly flakes
Salt (to taste)

Beat together all the ingredients for the dressing in a bowl till they are incorporated. Set aside. In another bowl, add the chopped apples, walnuts, lettuce, cream cheese and herbs. Add the dressing and toss well. Transfer to a serving dish and serve immediately.
