Beetroot and Sprouts Salad


Packed with the goodness of bean sprouts and vegetables, Beetroot and Sprouts Salad is one thing I swear by every time I go on a diet and crave for something spicy and refreshing. This salad has a lot of crunch – of sprouts, of raw, grated vegetables and of apple, which I toss in for some added taste. Plus, there is cottage cheese, which only increases the nutritional value of this Salad. Very simple to make and very tasty to eat, this Salad will leave you wanting more every time you eat it. Here’s how you can make it:


1 cup mixed sprouts (your choice of beans, bengal gram, etc)
1 carrot (peeled and grated)
1 cucumber (peeled and grated)
1 small beetroot (peeled and grated)
1/4 cup cottage cheese (grated)
1 small onion (finely chopped)
1 tomato (finely chopped)
1 apple (finely chopped)]
1 green chilly (minced)
1/2 inch piece ginger (finely chopped)
2 tablespoons coriander leaves (chopped)
Juice of one lemon
1/2 teaspoon Rock salt
1/2 teaspoon freshly ground black pepper
Salt (to taste)


Steam the sprouts for 5 minutes. Strain and transfer to a bowl. Add carrot, cucumber, beetroot, tomato, onion, apple, green chilly and ginger. Toss once. Now add salt, rock salt, black pepper and lemon juice. Mix well. Transfer to a serving dish. Top with grated cottage cheese and finely chopped coriander leaves. Transfer to a serving dish and enjoy!
