Nutella Pancakes

Now, who doesn’t LOVE Nutella? I have not seen any kid, adolescent, man, woman or elderly (and even pets!!) who does not drool at the very site (or smell) of this delicious chocolate spread. Nutella is considered a blessing in disguise by chocolate (Ferrero in particular) lovers like me. So well, when you must eat Nutella and yet eat healthy, what do you do? Simple. You make Nutella Pancakes. Using Buckwheat Flour and mashed Bananas. The result you get is Bliss! (Since this recipe is gluten-free, it is a great breakfast option for gluten sensitive people. Also, this recipe is Zero Oil and does not contain any extra sugar). Here’s how you can make it:

1 cup Buckwheat Flour
1/2 ripe Banana (mashed)
1/2 ripe Banana (roughly chopped)
3 tablespoons Nutella
2 tablespoons Honey
1 cup (50 ml) Milk
1 tablespoon Yoghurt
1/2 teaspoon Vanilla Extract
1/2 teaspoon Baking Powder
Salt (a pinch)
Chocolate Syrup, Mix Fruit Jam and Sliced Banana (for garnish)

Recipe:

Mix the mashed banana, Nutella, yoghurt, vanilla extract and honey and whisk well. Slowly add the milk while whisking continuously. Beat till all the ingredients are well incorporated. Now gently fold in the buckwheat flour, salt and baking powder. Mix well and set aside for 20 minutes.

Heat a non-stick skillet on medium heat and spread a ladle full of the batter to make pancakes. Cook on one side and then flip and cook the other side as well. Transfer to a serving dish. Mix the chopped bananas with chocolate syrup and pour over the pancakes. Garnish with more chocolate syrup, sliced bananas and mixed fruit jam. Serve. And keep smacking your lips even after you have polished off your plate! 😉
