The festival season in India is on. With Diwali or the festival of lights just 10 days away, sweet shops are doing brisk business. There are various kinds of sweets, chocolates and cookies available in the market. Packaged attractively, these goodies serve as the best gift during the festive season. While store bought gifts are a time saver, I personally feel homemade goodies packed in an attractive hamper and gifted to family and friends can add a personal touch to your gift and make the receiver feel special, just because you went that extra mile and made something especially for them. Now, I am not too much into extra sugary sweets. I believe in keeping it simple. And different. So, I have already started baking cookies and making chocolates to gift them to my loved ones on Diwali. Over the next few days, I will share with you the recipes of some homemade cookies and chocolates that can serve as the perfect gift during the festive season. In this post, I am sharing with you the recipe of Peanut Butter And Chocolate Chip Cookies. These cookies are healthy, guilt free and have a crunchy feel, with hidden chocolate chip surprise in each bite. I am sure your loved ones will love these cookies! Here’s the recipe:
1 1/2 cups whole wheat flour
1/4 cup roasted, unsalted peanuts (coarsely crushed)
100 grams creamy peanut butter
60 grams low fat butter
1/2 cup powdered sugar
1/2 cup brown sugar
1/4 cup chocolate chips
1 teaspoon baking soda
1 teaspoon baking powder
Using an electric beater, beat together the butter, powdered sugar and brown sugar in a bowl till light and fluffy. Add peanut butter and beat till incorporated. Sift together wholewheat flour, baking powder and baking soda into the bowl. Fold it in to make a sticky dough. Gently fold in the crushed peanuts and the chocolate chips. Cover the bowl with a cling wrap and refrigerate for about 30 mins.
Preheat the oven at 180 degrees Celsius.
Remove the bowl from the refrigerator and check if the dough has become workable. If it is still sticky, refrigerate for another 20 minutes. Once the dough is workable, shape it into lemon sized balls, making sure the chocolate chips are hidden inside. Line a baking tray with parchment paper and arrange the balls on it, keeping a one-inch gap between two balls. Gently press the balls and flatten to shape into cookies. Bake at 180 degrees for 15 minutes or till the cookies are crisp and golden. Allow to stand in the oven for 3 minutes and then retrieve the tray from the oven. Let the cookies cool completely before storing in an airtight glass jar.
Enjoy with tea/coffee or pack in a basket and gift to your loved ones.
