Rice and Carrot Fingers

The evenings are getting colder here in Delhi. The evening cup of Chai should be accompanied with something nice and warm to fight off the winter blues, Hubby says. I open the refrigerator to find a bowl of leftover cooked rice. I think for a minute, mix up the rice with an array of other ingredients, shape it into fingers, deep fry the fingers and serve them with ketchup and chai.ย Tada! It’s that simple. And that yummy! Trust me when I say cooking good food is no rocket science! My Spicy Rice Fingers have been a massive hit in my circle of friends. And this is one of the best dishes I have made of leftover rice. The perfect recipe for a cold winter evening, Spicy Rice Fingers will fill you with warmth for sure. Here’s how you can make it:

INGREDIENTS:

1 bowl cooked rice
2 tablespoons gram flour
1/2 bowl bread crumbs
1 carrot (peeled and grated)
1 large onion (finely chopped)
1 green chilly (minced)
1/4 inch piece ginger (minced)
2 tablespoons English Mustard
1/2 teaspoon white pepper powder
1/4 teaspoon cinnamon powder
Salt (to taste)
50 ml Water
Oil (to fry)

RECIPE:

Mix in all the ingredients, except oil. Add a little water and knead into a dough. Shape the dough into fingers and set aside.

Heat oil in a large frying pan. Drop in the rice fingers one by one and fry on medium heat till crisp and golden. Drain on a paper towel. Transfer to a serving dish and serve hot with ketchup or Green Coriander Chutneyย as an appetizer.
