I have been feeling rather blue lately. Lazy too. And I don’t blame it entirely on the weather. The last month has kept me terribly overworked with little time to relax, forget about indulging in my passions and interests. Obviously, I have been cooking less too! And when I do, it is all about rustling up some quick fix comfort food. Foods that would make me feel good. Now among the foods that cheer me up instantly, the top two places are certainly reserved for chocolates and ice creams. And when I want some extra cheer, I combine the two. Like I did in this super yum Chocolate-Walnut Brownie with Vanilla Ice Cream! A warm, gooey chocolate brownie with a scoop of Vanilla Ice Cream on the side and topped with hot chocolate sauce and loads of chopped nuts… Ah! Who wouldn’t get all happy and cheerful with that thing?! My mood is brightened for now, now I must brighten up yours! Go ahead, make this for dessert tonight. Here’s the recipe:
4 pieces chocolate-walnut brownie
4 scoops Vanilla ice cream (or Vanilla flavored whipped cream)
8 tablespoons chocolate sauce
4 tablespoons chopped walnuts/hazelnuts
Warm the brownie pieces in a microwave for a minute. Transfer to a serving dish and put a scoop of Vanilla Ice Cream or whipped cream on the side. Top with hot chocolate sauce and chopped nuts. Gobble up before the ice cream melts! 😉

NOTE: To make Hot Chocolate Sauce at home, take a bar of semisweet dark chocolate (250 grams), butter (50 grams) and 2 tablespoons sugar in a bowl and melt over a double boiler. When the chocolate starts melting, add half cup cream and 2 tablespoons of milk and stir well. Warm the sauce well over the double boiler or microwave for 30 seconds before using.
Isn’t the word “Chocolate” enough to pep you up? Well, then you can imagine what an extra dose of chocolate can do! For me, anything which is gooey, with lots of chocolate added in, always works in a positive way. So whenever I need that “feel-good” thing in my day-to-day life, whenever I need to cheer myself up in an instant, or whenever I want to reward myself for a task well accomplished or a deed well done, I make Triple Chocolate-Walnut Brownie Cake. This cake has cocoa, chocolate chips and chocolate sauce all combined together, and this is what makes it so special. Want to see for yourself? Here’s the recipe:
1-1/4 cup all purpose flour
1/2 cup powdered sugar
75 ml condensed milk
100 grams butter
2 tablespoons cocoa powder
1/2 cup dark chocolate chips
4 tablespoons dark chocolate sauce
1/2 cup walnuts (chopped)
1 teaspoon baking powder
1 teaspoon baking soda
50 ml cold milk
1 tsp butter (for greasing)
Preheat the oven at 175 degrees Celsius. Line a square cake tin with parchment paper and grease it with butter. Set aside.
Using an electric beater, beat together powdered sugar and butter in a large bowl till light and fluffy. Add in the condensed milk and beat till incorporated. Set aside.
Sift the flour, cocoa powder, baking powder and baking soda into the butter-sugar mixture and fold gently. Add milk and mix well till the batter reaches a pourable consistency. Add the chocolate chips and walnut and mix gently. Pour the batter into the cake tin and bake at 175 degrees Celsius for 20 minutes or till a skewer inserted in the middle of the cake comes out clean.
Transfer the cake to a wire rack and allow to cool a bit. Drizzle the cake with hot chocolate sauce. Cut into pieces and serve warm.
